Olive Oil and Renaissance

Since we started to rescue 3 different types of Spanish centenarian trees: Picual, Alberquina and Hojiblanca, last years olive oil production resulted in no production; even our first years production gave us a surprisingly good quality product! Then we began developing water solutions, techniques of triming, and the correct 100% natural organic soils. Our most sacred family rule: Don’t disturb or stress the trees! I got angry with workers who used them to hang clothes or bags, they need to live in peace.  We have a complete belief that the mystical and glorious nectar: The Olive Oil, will come with abundance and especially in quality. Every year was different in quantity, colour, taste, smell, cooking temperature, but constantly in proportion of polyphenols for 1 ml! 

But last year there was no production, it was an unusual rainy year with shorter seasons, but the trees were the hiding place for my kids during their games, was my only companion during day and night walks, full of ideas and thoughts, they were always there with their quiet sounds contrasting the East or West winds that change during the year.

Last year had no production but they were still there, proud old nature, that continues to live and believe in life and in this world. This year we took care of them as usual without expectations, but with the usual respect; until the season of preparing their mature fruit, and for us to only need to hand pick their greatness as we never use machines or racks to take the olives from them. This year was not the largest quantity, but the best quality olive oil we produced in a decade! This made me reflect that life is ours every day, and interacting with others with respect and kindness, will always take the best and possibly successful happiness from the other side.
